Shipping

Frozen when it reaches you. Or we send it again.

Shipping meat is the most expensive way to lose trust. So here is how the box is packed, which days it goes out, how long it holds — and what happens if it still arrives soft.

Order by noon — delivered the next working day

Cold chain

The box holds 48 hours. The journey takes one day.

Between the freezer at the butchery and your freezer lies exactly one day in transit. Everything you see here is built for that one day — with twice the reserve.

Opened shipping box: vacuum-sealed steaks between dry ice in a polystyrene insert, vapour rising above them
  1. 01

    Blast frozen

    −38 °C

Within 90 minutes of cutting, every piece goes into the freezer vacuum-sealed. From then on it stays at −18 °C until you open the box.

  2. 02

    Insulated box

    48 hours

Polystyrene insert inside the carton, rated for 48 hours. Twice as long as the journey the box actually makes.

  3. 03

    Dry ice

    by weight

The amount is measured against the weight of the order. Six bratwurst get less than a 2.5-kilo brisket.

    Delivery

    next day

Dispatch on Monday means delivery on Tuesday. No parcel of ours sits in a depot over the weekend.

Handling dry ice

Dry ice evaporates without residue — whatever is left when you unpack will disappear on its own. Do not touch the remains with bare hands, do not put them down the sink, and open the box in a ventilated room. If the dry ice has already gone, that says nothing about the meat: what matters is whether it is frozen hard.

Delivery dates

Order by noon, there the next working day.

Anything ordered by noon goes out the same day and reaches you the next working day. Later means one dispatch day further on.

We do not ship on Fridays. A parcel sent on a Friday can sit in a depot on Saturday — and no insulated box in the world bridges a weekend.

You choose the delivery day at checkout. If it no longer suits, write to us by noon on the dispatch day and we will move the order to the next date.

Thawing

Overnight in the fridge. Never in the microwave.

Blast-frozen meat loses almost nothing when it thaws slowly. Thawed fast it does — and then the juice sits on the plate instead of in the steak.

How to do it

Leave the vacuum bag sealed, put it on a plate and place it on the bottom shelf of the fridge. A 350-gram steak needs around twelve hours, a 2.5-kilo brisket two days. The plate catches the melt water.

How not to

Not in the microwave, not in warm water, not on a radiator, not in the sun. The edge cooks while the middle is still frozen — and then the steak is grey outside and cold inside. Never refreeze meat once thawed.

One hour before

Take thawed steaks out of the fridge an hour before grilling, pat them dry, and only then salt them. Cold meat on a hot grate loses colour outside before anything happens inside.

Core temperatures

Rare
52 °C — red centre, very soft bite
Medium rare
54–56 °C — what we recommend for loin steaks
Medium
58–60 °C — pink centre, firmer bite
Well done
63 °C — no pink left

Measured in the centre of the cut, with the probe clear of the bone. While resting, the core temperature rises another two to three degrees — so take it off the grill in good time.

Mince, patties and bratwurst must be cooked through: 68 to 72 °C. The card in every parcel gives core temperature, grilling time and resting time for each cut.

Complaints

When something is wrong.

Soft meat, a torn bag, a parcel two days late: it happens rarely, but it happens. This is how it goes then.

  1. 01

    Photo

Take a photo of the opened parcel and of the meat and send it to us within 24 hours of delivery. Add the order number — that is all we need.

  2. 02

    Decision

We answer within 24 hours. No form, no return label, no questions about whether the box really stood in the shade.

  3. 03

    Replacement or refund

Either a new delivery goes out on the next dispatch day, or we refund the amount to the same payment method. You choose which you prefer.

You never have to send anything back. Thawed meat does not travel across Germany a second time — that would be a win for nobody.

The legal framework

There is no right of withdrawal for perishable goods (§ 312g (2) no. 2 German Civil Code). Frozen meat cannot be returned like a pair of shoes — we could not sell it to anyone afterwards either.

That is exactly why we make this promise: we carry the risk of delivery, not you. We do not bury the exclusion in the small print; we put something next to it that is worth more than a return label. Your statutory rights in the case of defective goods are unaffected.

Questions

Five questions before the first order.

Can it go to a parcel locker?

No. Parcel lockers do not accept shipments containing dry ice, and an unrefrigerated compartment would be the end of the goods anyway. We deliver to an address where someone opens the door — at home or at the office.

Do you deliver to Austria or Switzerland?

No, we deliver within Germany only. As soon as customs or a second day in transit come into play, we can no longer promise an unbroken cold chain — and then we would rather not promise it at all.

Can a neighbour accept the parcel?

Yes, if they put it straight into the freezer or fridge. Leaving it somewhere unattended — a garage, a terrace, behind the bin — is ruled out: the box would stand in the sun until you get home.

What happens if nobody is there?

DHL tries again the next working day. That still falls within the 48 hours the box is built for. If the parcel then goes back into the network it becomes critical — so pick a day when someone is at home.

I am away — can I move the delivery date?

Yes. As long as the order has not gone out, meaning until noon on the dispatch day, we will move it to any later date. An email with the order number is enough.

Now you know how it arrives.

That leaves the easier question: which cut. 18 cuts, 3 boxes, all from the same cold chain.
